It was almost 200 years ago when the British Empire first encountered The Gurkhas. After the series of bitter conflicts a mutual respects and admiration developed and these indomitable Nepalese warriors were invited into the regular British Army. They were first recruited in colonial India in 1814-16. Almost about 200,000 Gurkhas fought for Britain in World War I .
       Since then The Gurkhas have been fighting for Britain and have won the Victoria Cross, the highest military honour, more times than any other regiment. They brought with them exceptional courage, fierce loyalty and their legendary curved knife “The Khukuri”.
       Now based in Kent, The Brigade of Gurkhas motto “Better to die than to live a coward”.
       The heart of the Gurkha meal is Dal Bhat (lentils and rice) and Achar (Pickle) surrounded by other dishes.
       The common factor is the use of fresh herbs and spices, many of which are unique to Nepali cooking and are prepared in the “Khal” (stone mortar), rather than the powders used in other Asian cuisines.
